Very quickly, preservation of truffles thanks to skilful cooking, then bottling them had to be perfected; Jean BAUDOIN received many prizes and awards for this know-how from the terroir enabling us to keep intact the visual, gustatory and olfactory properties of the Tuber melanosporum.
