French Mimolette actually comes from the Dutch Mimolette. During the 17th century, Colbert had banned the import of foreign cheese into France so the French began to make their own Mimolette under the name Boule de Lille or Holland. Mimolette has a dry and brittle texture which is salty and slightly sweet with flavours of toasted hazelnut and caramel.
