These langoustines come from an artisanal coastal fishery in the icy waters of Norway. They are fished at a depth of more than 300 metres by about 15 boats under 20 metres, which brave the currents of Midjorden Fjord during the day. Our fishermen use live traps to catch only about 20 kilos a day. This highly selective fishing technique allows us to put back into their natural habitat the live langoustines, which are too small.
Take the number of scampi you wish to eat and place them in a bowl of cold water for a few minutes. It is ready to eat and can be stored in the refrigerator for 12 hours after thawing for maximum freshness.
